That looks like a bug in the events component (possibly, specific to Joomla). The error is happening in the constructor of an object that is managing the event registration process (https://github.com/civicrm/civicrm-core/blob/master/CRM/Event/StateMachine/Registration.php), presumably after the payment has occurred. There are different tokens that can be selected in the message template to populate user details in the email. For custom fields, you can probably use {event.custom_<custom_field_id>} More about tokens - https://docs.civicrm.org/user/en/latest/common-workflows/tokens-and-mail-merge/

Also noticed that this is a pending/pay-later event registration, could that be why? Yes, according to the latest code till 5.19.1, I see transfer or cancel is only possible for participant with status = Registered
